Chicken divan: 1 cup cooked chicken, half a bag of frozen broccoli (thawed and patted dry), half a can of cream of chicken soup plus 2 tbsp milk, a handful of cheddar. 375°F for about 25 min. • 9. Shepherd's (cottage) pie: 1/3 lb ground beef, browned and drained, 1/2 cup frozen peas and carrots, gravy mix plus 1/4 cup water, 1 cup mashed potatoes ridged with a fork. 400°F for 20 min. • 8. Tamale pie: 1 can chili, a handful of cheese, half the batter from a small box of corn muffin mix. Leave an inch of space at the top. 400°F for 20–25 min. • 7. Cracker crumb cod: 1 cod fillet (thawed and patted dry), a handful of crushed butter crackers mixed with 2 tbsp melted butter. 400°F for 15–20 min, to 145°F. • 6. Chicken pot pie: 1 cup chicken, 1 cup frozen mixed vegetables, the other half can of cream of chicken soup, 1 refrigerated pie crust trimmed to fit with 3 slits. 400°F for 30–35 min. • 5. Salmon loaf: 1 small can salmon (drained, bones mashed in), 1 egg, a handful of crushed crackers, a splash of milk. 350°F for 30–35 min, to 160°F. • 4. Stuffed acorn squash: half an acorn squash (microwave the whole squash 3 min first, and cut a flat base), 1/4 lb raw bulk sausage, 1 tbsp brown sugar, butter, 1/4 cup water in the pan. 375°F for 45–50 min, sausage to 160°F. • 3. Crustless spinach quiche: 3 eggs plus 1/4 cup milk, 1/2 cup frozen spinach squeezed dry, 1/2 cup Swiss or cheddar. 350°F for 30–35 min. • 2. Loaf pan cherry pie: 1 can cherry pie filling, the second pie crust with slits, milk and sugar on top. Bake on a baking sheet at 400°F for 25–30 min. Cool for 20 min. • 1. Ham loaf: 1 cup finely diced ham, 1/3 lb ground pork, 1 egg, a handful of cracker crumbs, a splash of milk, mixed gently. 350°F for 40 min. Add a glaze of 2 tbsp brown sugar, 1 tbsp mustard and a splash of vinegar, then bake 15–20 min more, to 160°F. Safety notes • Use parchment paper, never wax paper, in a hot oven. • Microwave acorn squash before cutting it, and cut a flat base so it can't roll. • Check temperatures: chicken 165°F, ground meat and sausage 160°F, fish 145°F, and egg loaves 160°F. • Ham, canned soup, chili and sausage are high in sodium. • If you take a blood thinner, ask your doctor about vitamin K foods like broccoli and spinach. • Follow your doctor's advice first.
