Drain the soaked chickpeas and add them to a pressure cooker with fresh water, salt, and the tea bag, if using. 2. Cook for 5–6 whistles, or until the chickpeas are soft. Remove the tea bag and set the chickpeas aside. 3. Heat oil in a pan. Add cumin seeds and let them splutter. 4. Add the chopped onion and sauté until golden brown. 5. Add the ginger-garlic paste and green chilli. Cook for 1–2 minutes. 6. Add the tomato puree and cook until the oil separates. 7. Add turmeric, red chilli powder, coriander powder, cumin powder, chole masala, garam masala, and salt. Mix well. 8. Add the cooked chickpeas along with some of their cooking water. In a large bowl, combine the flour, semolina, yogurt, sugar, salt, baking powder, and oil. 2. Add water gradually and knead into a soft, smooth dough. 3. Cover and rest the dough for at least 1–2 hours. 4. Divide the dough into equal portions and roll each portion into a small, round disc. 5. Heat oil in a deep pan over medium-high heat. 6. Carefully slide one bhatura into the hot oil and gently press it with a slotted spoon so it puffs up. 7. Fry until golden on both sides. Drain on paper towels. 8. Repeat with the remaining dough.
