Ingredients
1kg frozen sweet corn
600g gouda cheese (grated)
1 bunch mint (cleaned and washed)
2 large onions diced(I only had small ones at the time)
10 green chillies chopped finely( you can use less if you want it mild).
3 table spoons sunflower oil.
2 table spoon salt (adjust to taste)
Store bought samoosa strips.
In a heavy base pot, add oil to heat.
Add onions and chillies and fry until onions are translucent.
Add sweetcorn, salt and cook for 5 minutes with lid on.
Add cheese and mint.
Mix well and remove from heat.
Wait to cool before filling into strips.
Fry samoosa's in shallow oil on medium heat and enjoy.
The humble samoosa -
Imagine a thin, flaky pastry folded into a perfect little triangle, then deep-fried until it's light, crunchy and golden brown.
Inside it's filled - usually with spiced mince, chicken, cheese and corn, or potato and peas for the vegetarian ones. The filling is warm, soft, and full of Indian spices - not too hot, just flavourful.
You eat it with your hands, usually with chutney or a yogurt dip. One bite gives you that crunch and then the hot, savoury filling. It's a snack, a starter, and comfort food all in one.
You can make it for special occasions or to keep in the freezer for when guests pop in. My family loves to have samoosa's for dinner on day's that I don't feel like cooking.
