Magic Garden Summer Squash Casserole Today, I'm bringing a little garden magic into my kitchen, with fresh vegetables from my student Kim’s Magic Organic Garden in sunny Florida. Kim grows her beautiful veggies with care, sunshine, and love and you can taste that freshness in every bite. She shared some gorgeous summer squash with me, so I’m turning it into a homemade summer squash casserole that’s cozy, flavorful, and perfect for family dinners or anytime you want a delicious taste of the garden. Let’s get cooking! Homemade Summer Squash Casserole Ingredients • 4-5 summer squash • 2 cups of diced ham • 2 cups of marinara sauce • 1 tablespoon olive oil or butter • 1 cup shredded cheddar cheese • 1 cup mozzarella cheese • 1 cup crushed buttery crackers or breadcrumbs • 1/2 teaspoon salt • 1/4 teaspoon black pepper • Italian herbs • Everything bagel Directions 1. Preheat the oven to 350°F. 2. Grease a backing dish and set aside 3. Cut the squash in slices sprinkle salt and let them sweat for 10 minutes, then tap them with a kitchen paper to remove the extra liquid. 4. Cut the ham into small pieces 5. Add oil in a backing dish and sprinkle evenly with breadcrumbs and everything bagel mix(optional) 6. Layer the squash marinara sauce ham and cheese in the casserole 7. Sprinkle evenly over the top of the cheese and breadcrumbs. 8. Bake for 25 to 30 minutes, or until the casserole is hot, bubbly, and golden on top. 9. Let it rest for 5 minutes before serving. Thank you so much for joining me in the kitchen today. A special thank-you to Kim and her Magic Organic Garden for sharing these beautiful summer squash and reminding us how wonderful it is to cook with fresh, homegrown ingredients. I hope this casserole brings warmth, comfort, and a little garden magic to your table. Until next time, cook with love, share with joy, and take care.
