Masala Neer Dosa is a flavorful twist on the traditional Neer Dosa, a popular South Indian rice crepe known for its light, lacy texture. The addition of a spiced masala enhances its taste, making it a delightful option for breakfast, snacks, or a light meal. Ingredients: For Neer Dosa Batter: Raw rice: 2 cup Water: 4cups (adjust for consistency) Salt: to taste For Masala 2 tbsp oil 1/2 tsp mustard seeds 1/2 tsp cumin seeds 1 Green chili Ginger (grated): 1 tsp Curry leaves: 8-10 Coriander leaves (chopped): 2 tbsp Salt: to taste Preparation: Step 1: Prepare the Neer Dosa Batter Wash and soak the rice for 4-6 hours Drain and blend the rice with salt and some water to a smooth, thin batter. Add enough water to achieve a watery consistency. The batter should spread easily when poured on the pan. Step 2: Prepare the Masala Heat oil in a pan and add mustard seeds. Let them splutter. Add cumin seeds. Add curry leaves, green chilies, and grated ginger. Sauté for a minute. Add the above seasoning to the batter Garnish with chopped coriander leaves and set aside. Step 3: Cook the Neer Dosa Heat a non-stick pan or cast iron skillet on medium heat. Ensure it's evenly heated. Pour a ladleful of batter onto the pan, swirling it to spread the batter thinly and evenly. Do not spread it with a spoon. Cover and cook for about 1-2 minutes. Do not flip; Neer Dosa is cooked on one side only. Gently remove the dosa using a spatula. Fold the dosa as desired. Serve hot with coconut chutney or sambar.
