Cabbage Casserole and Homemade Cream of Chicken Soup
Ingredients:
1/2 cabbage, cut up
1 medium onion, sliced or chopped
salt & pepper to taste
1 can cream of chicken soup
or 1 cup homemade cream of chicken soup, recipe below
1/3 cup mayonnaise
1 stick of butter, melted and divided
1 sleeve butter crackers, I used Ritz
Directions:
Preheat oven to 350 degrees
Add cabbage, cut up, to casserole dish, 8X8 or 9X9. Scatter cut onions on top of cabbage. Salt and pepper to taste. Using 4 Tablespoons of melted butter, sprinkle over cabbage and onions. Combine cream of chicken soup and mayonnaise. Spread over cabbage. Crush crackers and combine with remaining butter. Spread over cabbage and soup mixture. Bake 45-55 minutes or until cabbage and onions are tender and bubbly.
Homemade Chicken Soup
4 Tbsp butter
1/2 cup + 2 Tbsp flour
2 cups chicken broth
1 chicken boullion cube, or 1 tsp Better Than Boullion
1 cup milk
1/3 tsp onion powder
1/3 tsp garlic powder
1/3 tsp salt
1/3 tsp pepper
Heat milk in microwave for 45 seconds. This will prevent curdling and lumps when added. Set aside.
Melt butter in saucepan over medium heat, about 3 minutes or until butter foams. Add flour gradually, whisking well. Remove from heat.
Add chicken broth a little at a time, whisking well after each addition. Add bouillon, milk, and seasonings.
Return to heat and cook until soup begins to thicken. It will thicken more as it cools.
Cheesy Potatoes
Ingredients:
2 - 4 large potatoes, peeled and cut into 1/4 inch slices
1 small onion, sliced, med - large if making large quantity
4 oz colby cheese
2 oz pepper jack cheese
2 oz sharp cheddar
1/2 - 1 cup chicken broth
salt & pepper to taste
*I used Kinders Seasoning Blend, salt, pepper, and garlic
Directions:
On stove top in a medium to large pan, depending on how much you are making, add chicken broth. Layer potatoes, onion, and lightly season with salt & pepper. Layer again until all potatoes and onions are used, seasoning lightly between layers. Cook on stove top until potatoes are tender. Spread cheese on top of potatoes. Cover and leave on stove top long enough for the cheese to melt.
