Steam the pumpkin: Peel and cube roughly half a pumpkin. Place in a sieve over boiling water. Cover and steam until completely soft. A fork should go in with zero resistance. 2. Make the Biscoff crust: Blend Biscoff cookies into fine crumbs. Reserve some dry crumbs for the topping. Mix the rest with melted butter until it holds when pressed. Press firmly into a plastic-wrap-lined springform pan. Refrigerate. 3. Make the pumpkin filling: Blend steamed pumpkin smooth. Return to the sieve over a saucepan. Add sugar, powdered sugar, and cinnamon. Cook over a water bath, stirring constantly, until thickened and most moisture has evaporated. Spread thin on a plate, cover with plastic wrap, and freeze until cold. 4. Bloom the gelatin: Sprinkle dry gelatin over cold water. Let sit until fully swollen, about 10 minutes. Melt gently (microwave in short bursts or water bath). Do not boil. 5. Make the cream filling: Beat cream cheese with powdered sugar until smooth. Add heavy cream and beat until fluffy and thick. Mix in the prepared gelatin. 6.
