Today I make a large portion of pork spring rolls with cabbage, carrot and glass noodles. I made small ones and big ones, and my daughter helped me roll them. Ingredients • 6 small bundles glass noodles • 1 1/2 kg ground pork • 500 g cabbage, shredded • 1 medium carrot, shredded • 1 medium onion, diced small • 1 large shallot • 8–9 cloves garlic, minced • 4 stalks green onion • 1 1/2 tsp pink salt (regular salt is fine) • 1 Tbsp chicken powder • 3 tsp sugar • 1 tsp ground pepper • 1 Tbsp oyster sauce • 1 Tbsp light soy sauce • 2 egg yolks (my eggs are small; use 1 yolk if your egg is really large). Save the egg white to seal the wrappers. • Spring roll wrappers (small about 8 x 8 inch, or big 10 x 10 inch) • Oil for deep frying • Sweet chili sauce for dipping Steps 1. Soak the glass noodles in warm water for 10 minutes. Make sure the water fully covers them. 2. Soak the onion in cold water and set aside. 3. Mince the garlic and chop the green onion and shallot. 4. Peel and shred the carrot. Squeeze most of the juice out. 5. Drain the glass noodles, squeeze out all the water and cut them shorter. 6. Dice the onion small. 7. Shred the cabbage and squeeze some of the water out too. 8. In a big bowl, add the pork, glass noodles, cabbage, onion, carrot, green onion, shallot and garlic. Add the salt, chicken powder, sugar, pepper, oyster sauce, light soy sauce and egg yolks. 9. Mix until everything is well combined and sticky. Turn it up from the bottom and squeeze. It took me about 7 minutes. 10. Put the filling in the middle of the wrapper (about 1/2 Tbsp for a small one). Roll the first part, fold in both sides and roll tight all the way. Dip the tip in egg white and seal. 11. Deep fry at 375°F for 8 minutes. If you want them browner, cook 1 more minute. Tips • Soaking the onion in cold water helps so it doesn't make you cry (it didn't work for me this time!). • Light soy sauce doesn't have much smell, so it won't taste like soy sauce. • Smell the filling. If it smells good, the flavour is right. If the smell is so strong you can almost taste it in your nose, your filling might be too salty. • Roll tight from the beginning.
