Come with me to Pelion, one of Greece’s most beautiful mountain regions, just as autumn begins to transform the landscape. 🍂 Known in Greek mythology as the Mountain of the Centaurs, Pelion is a place where mountains tumble toward the sea, stone villages sit among ancient trees, and old cobbled paths wind beneath chestnut, beech and plane trees glowing in shades of gold, copper and crimson. Autumn here has a completely different rhythm. The summer crowds disappear. Village squares become quieter. The air turns cooler. Chestnuts, walnuts and the famous apples of Zagora arrive with the harvest, while jars of preserves and traditional spoon sweets begin filling pantry shelves. And eventually, after wandering through the stone lanes and sitting beneath one of Pelion’s enormous plane trees, attention inevitably turns to food. Today, we are making one of the region’s most traditional dishes: SPETSOFAI Spetsofai, sometimes called spentzofai, is a rustic dish of thick countryside sausage and peppers cooked in a rich tomato sauce. It is deeply associated with Pelion and Thessaly, and despite the similarity in its name, it does not come from the Greek island of Spetses. And today, we are making one of its most traditional dishes: SPETSOFAI Spetsofai is a rustic dish of thick countryside sausage, green horn peppers, red Florina peppers, onion and tomato cooked together until rich, glossy and deeply savoury. Despite the name, it does not come from the island of Spetses. Spetsofai belongs to Pelion and Thessaly, and its name is traditionally linked to the local word “spentza,” meaning hot pepper. It is simple Greek country cooking at its best — especially with feta, crusty bread and a glass of red wine. TRADITIONAL PELION SPETSOFAI Ingredients 2 thick rustic sausages 6 green horn peppers 2 red Florina peppers 1 onion 1 garlic clove 1 small aubergine, optional ¼ cup / 60 ml red wine 2 ripe tomatoes, peeled and chopped 1 ripe tomato, grated Fresh oregano Olive oil Salt Black pepper To serve Feta Crusty bread METHOD 1. Brown the sausage Cut the sausage into thick pieces. Heat a little olive oil in a wide pan and brown the sausage well on all sides. Remove and keep warm. 2. Cook the onion In the same pan, sauté the sliced onion for about 4–5 minutes until softened. 3. Add the vegetables Add garlic, green horn peppers, Florina peppers and the optional aubergine. Cook for another 4–5 minutes until they begin to soften. 4. Return the sausage Add the browned sausage back to the pan. 5. Deglaze with wine Pour in the red wine and let it bubble until most of the alcohol cooks away. 6. Add the tomatoes Add the chopped tomatoes and grated tomato, followed by fresh oregano, black pepper and a little salt. 7. Simmer Cook for about 6–7 minutes, or until the sauce reduces and becomes rich and glossy. The dish should not be watery. Serve warm with feta and plenty of crusty bread.
