Today we're making Kali Mirch Paneer, a rich and creamy paneer curry with the bold flavour of freshly crushed black pepper.
The gravy is prepared with onions, cashews, ginger, garlic and whole spices, then finished with cream, garam masala and plenty of crushed black pepper. Fried paneer is added to the silky gravy and finished with a chilli rogan for an extra layer of flavour.
A perfect paneer recipe for a special meal, family dinner or daawat.
🥣 Ingredients
For the Gravy
• Oil – 100 ml
• Black Cardamom – 2
• Bay Leaves – 2
• Green Cardamom – 4
• Cinnamon – 1 inch
• Sliced Onions – 3
• Ginger – 2 inches
• Garlic – 5 cloves
• Green Chillies – 2
• Cashews – 50 grams
For Cooking
• Oil – 50 ml
• Whole Cumin – 1 tbsp
• Ginger Garlic Paste – 1 tbsp
• Salt – to taste
• Sugar – 1 tsp
• Paneer – 500 grams
• Cream – 2 tbsp
• Crushed Black Pepper – 2 tbsp
• Garam Masala – 1 tsp
For Garnish
• Red Chilli Rogan – 1 tsp
• Fresh Coriander – 2 tbsp
👨🍳 Method
Heat oil in a pan and add black cardamom, bay leaves, green cardamom and cinnamon.
Add sliced onions, ginger and garlic. Sauté for about 5 minutes.
Add cashews and green chillies and continue cooking until the onions begin to brown.
Add a cup of water and cook briefly. Allow the mixture to cool, then blend into a fine paste.
In a fresh pan, heat oil and crackle the cumin.
Add ginger garlic paste and sauté for about 3 minutes.
Add the prepared onion and cashew gravy paste and cook well.
Season with salt and add a pinch of sugar.
Cut the paneer into slices and fry until lightly golden.
Add the fried paneer to the gravy and cook for another 5 minutes.
Add cream, crushed black pepper and garam masala. Mix well.
Cover and cook for 5 minutes, allowing the paneer to absorb the flavours.
For the finishing rogan, add red chilli powder to the hot leftover paneer-frying oil and pour it over the plated paneer.
Garnish with fresh coriander and chilli rogan.
Serve hot with naan, roti or paratha.
