EGGPLANT AND POTATO CURRY || VEGAN RECIPE

INGREDIENTS 3 tbsp of mustard oil 1 small bay leaf 1 tsp of cumin seeds 1 tsp of fenugreek seeds 4 cloves of garlic, sliced 1 large onion, sliced 1 tsp of ginger garlic paste 2 medium size eggplants, cut into cubes 3 medium size potatoes, cut into cubes 2 tbsp of tomato paste 1 tsp of ground coriander 1 tsp of ground red chilli 1/2 tsp of crushed black pepper 1/2 tsp of ground cumin 3/4 tsp of ground turmeric salt to taste some chopped coriander leaves NOTE - Adjust the spices according to your taste.
