Cottage Cheese Filled Crepes
INGREDIENTS
4 eggs
1 tbsp. sugar
1/4 tsp. salt
1 cup milk
1 cup sparkling mineral water (or club soda)
2-1/2 to 2-3/4 cups all-purpose flour
Cottage Cheese filling:
2 cups dry cottage cheese
2 egg yolks
3-5 tbsp. icing sugar
2-4 tbsp. sour cream
2 tbsp. lemon rind
1 tsp vanilla
Sauce;
1/2 cup whipping crem
2 –3 tbsp icing sugar
1/4 cup butter, cut into chunks
DIRECTIONS
Place eggs in a medium size bowl; add sugar and salt; beat with an electric mixer until frothy, then slowly add the milk and water. With mixer on low, mix in the flour until the mixture becomes, smooth and thin sauce.
Brush a large frying pan with oil or melted margarine. Place a ladle full of batter and roll the pan to evenly distribute batter on the bottom of the pan. Cook for about 1 minute or until edges start to crisp and lift away from the pan. Turn on the other side, and cook a few second longer.
Remove from pan and stack them on a plate.
Makes:12-14 crepes
To make the filling mix together all the ingredients until smooth and creamy adding powder sugar and sour cream as needed.
To make the rolls cut each into 4 cuarters. Place a tablespoon of filling and roll them up as cabbage rolls. Place into a buttered dish. Make the sauce by whisking whipping cream and icing sugar together. Scatter top of roll with butter, then pour the cream on top.
Bake at 350 for 45-50 minutes or until bubbly.
Let cool slightly before serving.
Makes 50 rolls
