Heat 1 tsp ghee in a heavy-bottomed pan on low-medium heat.
Add the 1 cup grated coconut and sauté for 2 minutes without letting it brown.Add the grated jaggery, 1/2 tsp cardamom powder, and optionally a pinch of nutmeg or roasted poppy seeds.
Stir continuously until the jaggery melts and blends with the coconut until thick yet slightly moist.
Do not overcook, or the filling will turn hard. Set aside to cool.Preparing the Rice Flour Dough (Ukad)Bring 1 cup water, 1 tsp ghee, and a pinch of salt to a rolling boil in a saucepan.
Turn off or lower the heat, and gradually add 1 cup rice flour, stirring continuously to avoid lumps.
Cover the pan with a lid and let it rest off the heat for 5 minutes so the flour steams.
Transfer the warm mixture to a bowl or plate, grease your hands with a little ghee or water, and knead thoroughly for 5–7 minutes until smooth and pliable.
Keep the dough covered with a damp cloth at all times.
Shaping and Steaming the ModakPinch a lemon-sized ball of dough, make pleats by hand
Place a small spoonful of the cooled coconut filling in the center.Bring the edges together to form pleats (kalya), pinch and seal the top into a neat peak.Arrange the modaks on a greased steamer plate or over a damp cotton cloth/banana leaf.
Steam on medium heat for 10–12 minutes until the outer shell looks glossy and non-sticky.
Serve warm drizzled with pure ghee.❤️
