Fall asleep tonight inside the warmest room in an 18th-century English country house: the great kitchen, at the hour of the fire. The roasting hearth ran up to 8 feet wide, so fierce you could not hold a hand near it, and the clockwork jack that turned the spit had to be rewound every 20 minutes. A single rushlight gave barely 20 minutes of light, candles had been taxed since 1709, and a scullery maid earning as little as £6 a year rose at half past 5 to wake the fire before anyone else in the house stirred. Above the stairs, the family were served a dinner they never once saw cooked. Behind the green baize door, a whole quiet world stayed awake so the house could sleep.
