Today I don't have much time — it's my kid's school observation day, so I need to eat fast! That's where ochazuke comes in. Ochazuke is simple, but so delicious — it's a true Japanese soul food. There's actually a lot of depth to it too: some people top it with grilled salmon, tarako (cod roe), or even tenkasu (crispy tempura bits) — basically any salty topping works! Green onions and sesame seeds are great additions as well. It's quick to eat, which makes it a lifesaver for busy Japanese people like me lol.
