Make ginger water to add to the dough. Finely chop ginger and soak in water for 10 minutes, then squeeze. Grate the ginger if you want the ginger flavor to come through. Next, make the syrup. In a saucepan, heat the sugar and water, and when it comes to a boil, add the cinnamon. You can also use powdered cinnamon. When the syrup is roughly half full and lightly thickened, turn off the heat. Next, make the dough. Sift the flour, add the food powder and salt, mix lightly, then add 4 tablespoons of ginger water and knead. If you knead too much, the dough will become stiff. Wrap the dough in plastic wrap and let it rest in the refrigerator for 30 minutes. Flour a board and a cotton swab, then roll out the dough. The thickness of the dough should be about 2 to 3 mm. After rolling out the dough, cut it into 2 cm x 5 cm rectangles. The dough is very sticky, so it is easier to handle if you sprinkle more flour on it. Fold the dough in half and cut a slit in the shape of a river. Make the middle long and the ends short. Insert one end into the middle cut and twist. This time, I used three colors of food powder: orange, purple, and black. Yes, Halloween colors (lol). Once the oil is heated to 140-150 degrees Celsius, fry the dough. Fry the dough, turning it upside down from time to time, until crispy around the edges (about 4 to 5 minutes). Once the excess oil is drained, dip them in the syrup you just made. Place on a baking sheet and drain off the excess syrup. When the excess syrup is drained and the surface is no longer sticky, it is done. Umejakka (mejakka) is ready. It is delicious as it is, but even better when dipped in ice cream (^^) Translated with DeepL.com (free version)
