#Carniceria #CheapBeef #MexicanMom 📖 ¿Qué está bueno hoy? is on page 386 of The Old Mexican Way, in the Market Day chapter (pages 382 to 395) with my mother's three prices for every cut and how she asked the price of five pounds: https://oldmexicanway.com There is a handwritten card in the meat case at the carnicería that says $4.49 a pound, and three blocks away the same cross-cut shank is $6.23 on a printed Walmart label. Same animal, same bone, same pound. The difference is that the carnicería expects you to ask. Seven things my mother did at that counter every Thursday: six cuts under $5 a pound this week with the exact words to say in Spanish, what my carnicería charged, what Walmart charges for the same cut, the pot each one makes, and the one secret that is free. Plus the four cuts everyone asks for that are over $5 everywhere now, and the one place Walmart wins (said straight). None of this is your fault. The supermarket took the man away and put a printed label where he used to stand, and the label does not answer questions. The 7: 7. Retazo con hueso, para caldo, about $2.99 (the bag of bone-in trimmings; caldo de res for eight) 6. Cachete, about $4.99 (barbacoa; right at the line, check Walmart too) 5. Paleta, para guisar, about $4.49 (ask for the dish, not the cut; one pound feeds four) 4. Diezmillo para asar, about $4.99 (the Tuesday carne asada; limón, salt, garlic, time) 3. Molida del día, about $4.49 (ground today; the Walmart 10 lb roll is cheaper per pound, said so) 2. Chambarete, para cocido, about $4.49 (the card on the thumbnail; the marrow on a tortilla) 1. ¿Qué está bueno hoy? (free, and the reason she paid less for thirty years) Over $5 this week, everywhere: arrachera, lengua, costilla, rabo. Said plainly: carnicería prices are not online; these are my counter's cards this week and yours differs by city and week. Walmart prices are from walmart.com this week. Beef is high everywhere this year. Not medical advice; caldo is food, not medicine.
