Hello my dear friends💛
Welcome to a peaceful autumn day in the Finnish countryside. 🍂🌧️
The morning began beautifully sunny, with Hannu and Hilma outside trimming the grass in our yard. Meanwhile, I stayed in the kitchen, clean the freshly picked red currants, and prepared a cozy Red Currant Vanilla Clafoutis.
Soon, the weather completely changed, and heavy autumn rain began to fall. With Hannu and Hilma away visiting a friend, I enjoyed the quiet house, finished baking my clafoutis, and sat down with a warm cup of coffee while listening to the rain. ☕🌧️ Sometimes the simplest moments at home are the most comforting.
Later that afternoon, I prepared Hilma’s meal of fish and vegetables, followed by a little yogurt with blueberries and banana. 🐾🫐
I then continued preparing our red currants, saving some in the freezer for winter and turning the rest into homemade red currant juice to enjoy during the colder months ahead. ❤️
These early autumn days always remind me to slow down and appreciate the changing seasons, the sound of rain, something homemade baking in the oven, preserving summer berries, and the peaceful rhythm of countryside life.

💛 Recipe 📌
🍰 Red Currant & Vanilla Clafoutis 🔴
A soft, creamy baked dessert with bright red currants. It is lightly sweet and pleasantly tart.
🧺 Ingredients 📌
300 g fresh red currants, removed from the stems
3 large eggs, at room temperature
110 g granulated sugar, divided
2 teaspoons vanilla sugar or 1 teaspoon vanilla extract
Finely grated zest of ½ lemon
80 g all-purpose flour
¼ teaspoon salt
250 ml whole milk, at room temperature
100 ml whipping cream
30 g unsalted butter, melted and slightly cooled
10 g butter for greasing
1 tablespoon sugar for coating the dish
Powdered sugar for serving (Optional)
👩🍳 Instructions 📌
1. Heat the oven to 180°C conventional or 170°C fan.
2. Generously grease a 24 cm round ceramic or glass baking dish with 10 g melted butter. Sprinkle with 1 tablespoon sugar and rotate the dish to coat the bottom and sides.
3. Gently wash the red currants and dry them thoroughly. Spread them evenly over the bottom of the prepared dish.
4. In a bowl, whisk the eggs with 90 g sugar, vanilla, and lemon zest for about one minute. The mixture should be smooth and slightly lighter, but it doesn't need to be fluffy.
5. Add the flour and salt. Whisk until smooth and thick.
6. Whisk in the milk and cream. Add the melted butter and mix until completely smooth. The batter will be thin, similar to pancake batter.
7. Carefully pour the batter over the currants. Sprinkle the remaining 20 g sugar over the surface. This helps balance the tart berries and creates a delicate top.
8. Bake for 35–42 minutes, until the edges are golden and puffed and the center has only a gentle wobble. Don’t bake until completely firm; it will continue setting as it cools.
9. Allow it to rest for 15–20 minutes. Dust lightly with powdered sugar before serving. (Optional)
10. Serve slightly warm or at room temperature. It is delicious on its own, but you can add:
Lightly whipped cream
Vanilla ice cream
A few fresh red currants
A little warm honey
