🥛 Ingredients for Black Sesame Milk:
Black sesame seeds (unhulled) - ⅔ cup | 95 g
Raw cashews (soaked) - ½ cup | 70 g
Water - 3⅓ cups | 800 ml (divided)
2 Medjool dates (pitted)
Salt - a pinch
Vanilla extract - ½ tsp (optional)
🌱 Ingredients for Zero-Waste Black Sesame & Cashew Pulp Spread:
Black sesame & cashew pulp (all leftover pulp)
2 tbsp Nutritional yeast
½ tsp Smoked Paprika
½ tsp Garlic Powder
Pinch of Salt
1 tbsp Lemon juice
1 tbsp Soy Sauce
1 tbsp Olive oil
2-4 tbsp Water
🧑🍳 PRO TIPS FOR MAKING THE PERFECT PLANT MILK:
ℹ️ Use unhulled sesame seeds to retain the outer layer where the calcium is concentrated.
ℹ️ Dry-toast seeds over medium-low heat for 2–3 minutes to release their nutty aroma. Do not over-toast to avoid bitterness.
ℹ️ Blend with half the water (400 ml) first to break down the seeds thoroughly, then add the rest for a finer, creamier texture.
ℹ️ Keep the milk refrigerated in an airtight bottle for up to 4 days. Shake well before serving.
ℹ️ Serve the savoury spread over crispy toasted bread and finish with fresh chives, spring onions, or chilli flakes.
