Thallu Vandi Thanni Sambar | Street Style Tiffin Sambar | Idli Dosa Sambar
That hot, light and flavour-packed Thallu Vandi Thanni Sambar instantly brings back memories of roadside tiffin shops, where steaming idlis and crispy dosas were generously served with aromatic sambar! 😍 This easy Tiffin Sambar has the perfect thin consistency and a special freshly ground paste that makes it absolutely delicious with idli and dosa.
This authentic Thallu Vandi Thanni Sambar is a beautifully light and flavourful sambar with a deliciously thin consistency. Unlike thick, dal-heavy sambars, this version gets its unique taste from roasted gram, fennel seeds and green chilli, freshly ground into a smooth paste. Shallots and tomatoes add natural sweetness and flavour, while sambar powder gives it that familiar South Indian tiffin-sambar aroma.
In this recipe, shallots and tomatoes are pressure cooked with turmeric and water for 3–4 whistles. The cooking water is drained and reserved, while the cooked vegetables are mashed well. Sambar powder and salt are added to the reserved water and boiled, followed by the freshly ground roasted gram, fennel and green chilli paste. More water is added to achieve that perfect Thanni Sambar consistency, and everything is cooked until the raw smell disappears. Finally, fresh coriander leaves are added for a beautiful finishing touch. 🌿
INGREDIENTS:
Main Ingredients:
• Shallots – 10–15
• Tomato – 2
• Turmeric powder – ¼ tsp
• Water – 1½ cups
• Salt – as needed
• Sambar powder – 1 tbsp
Special Ground Paste:
• Roasted gram – 3 tbsp
• Fennel seeds – 1 tsp
• Green chilli – 2
• Little water – for grinding
Garnishing:
• Fresh coriander leaves
METHOD:
1. Add shallots, tomatoes, turmeric powder and 1½ cups water to a pressure cooker. Pressure cook for 3–4 whistles.
2. Drain the cooked water into a separate cup and mash the cooked shallots and tomatoes well.
3. Add the reserved cooking water, salt and 1 tbsp sambar powder. Boil for 2 minutes.
4. Grind roasted gram, fennel seeds and green chillies with a little water into a fine paste.
5. Add the freshly ground paste and 1 cup water to the sambar. Mix well and cook until the raw smell disappears.
6. Garnish with fresh coriander leaves and serve hot!
