Creamy salmon, tender vegetables, and a rich, comforting sauce — all cooked together in one pot.
This easy creamy salmon stew is packed with salmon, carrots, mushrooms and broccoli, finished with a touch of white wine and heavy cream. Simple ingredients, easy preparation, and plenty of flavour.
Recipe
Ingredients
• 400g salmon, cut into large chunks
• 2 carrots, cut into chunks
• 10 button mushrooms, quartered
• ½ medium broccoli, cut into bite-sized pieces
• ½ onion, finely chopped
• 10g butter
• 1 tbsp flour
• 2 bay leaves
• ⅓ cup white wine
• Water, enough to cover just over half of the ingredients
• ⅔ cup heavy cream
• Extra virgin olive oil
• Salt and black pepper
Method
1 Pat the salmon dry, cut into large chunks, and season with salt and black pepper. Mix well and marinate for 15 minutes.
2 Blanch the broccoli until just tender, then set aside.
3 Heat a pan over medium-low heat and add extra virgin olive oil. Quickly sear the salmon until the surface is set, then remove and set aside.
4 Add the butter and sauté the onion for 1 minute.
5 Add the carrots and mushrooms, then stir in the flour.
6 Add the bay leaves and white wine. Pour in enough water to cover just over half of the ingredients.
7 Season with salt and black pepper. Cover and simmer over low heat for 10 minutes.
8 Return the salmon to the pan and add the broccoli.
9 Pour in the heavy cream and simmer over low heat for another 5 minutes.
10 Remove the bay leaves before serving.
Creamy, colourful, and packed with tender salmon.
