Cauliflower – 1 small bowl, chopped
Tomato – 1, chopped
Onion – 1, finely chopped
Green chillies – 3
Ginger-garlic paste – 1 tablespoon
Coriander leaves – finely chopped, as needed
Black pepper powder – 1 teaspoon
Turmeric powder – ½ teaspoon
Lemon juice – ½ lemon
Ghee – 1 tablespoon, plus 1 teaspoon for the final touch
Oil – ½ tablespoon
Salt – as per taste
Water – 3 glasses
Whole Spices
Bay leaf – 1
Cardamom (Elaichi) – 2
Cloves (Lavanga) – 3–4
Cinnamon (Teke) – 1 small piece
🍲 Preparation Method
Step 1: Prepare the Vegetables
Wash and soak the basmati rice for 30 minutes.
Chop the carrot, beans, potato, cauliflower, tomato, and onion.
Clean the cauliflower by soaking it in warm water, then drain it.
Keep the green peas, green chillies, and chopped coriander leaves ready.
Step 2: Fry the Whole Spices
Heat a pressure cooker.
Add 1 tablespoon of ghee and ½ tablespoon of oil.
Add the bay leaf, cardamom, cloves, and cinnamon.
Fry briefly until the spices release their aroma.
Step 3: Add Onion and Masala
Add the finely chopped onion and sauté for about one minute.
Add the ginger-garlic paste and green chillies.
Mix well and sauté until the raw smell disappears.
Add the chopped tomato and cook until it softens.
Step 4: Add the Vegetables
Add the carrot, beans, green peas, potato, and cauliflower.
Mix everything well.
Add salt, black pepper powder, and turmeric powder.
Stir well and cook for a few minutes so the vegetables absorb the flavours.
Step 5: Add Basmati Rice and Water
Drain the soaked basmati rice and add it to the cooker.
Mix gently with the vegetables and spices.
Add 3 glasses of water for 1½ glasses of rice.
Add lemon juice and check the salt.
Mix everything gently and close the pressure cooker lid.
Step 6: Pressure Cook
Cook for one whistle, then switch off the flame.
Allow the pressure to release naturally before opening the lid.
Check that the rice and vegetables are cooked properly.
Note: Cooking time and the amount of water may vary depending on your rice and pressure cooker.
Step 7: Final Touch
Open the lid and add 1 teaspoon of ghee over the pulao.
Add the chopped coriander leaves.
Gently fluff the rice with a fork so the grains remain separate.
