Traditional Shinwari Karahi uses no onions, but in Punjab, we LOVE rich, thick gravy! In this recipe, we take the classic tomato-heavy Shinwari base and elevate it with a smooth onion-infused masala, white pepper, and crushed kasuri methi.
Whether you're cooking on a gas BBQ side burner or your kitchen stove, this 20-minute karahi delivers authentic street-style flavor every single time.

📋 INGREDIENTS LIST
Chicken: 1 kg (Curry Cut)
Cooking Oil: 1 Cup
Tomatoes: 1 kg (approx. 5 medium-large)
Onions: 2 medium (thinly sliced)
Ginger Garlic Paste: 1 tbsp
Salt: 1 tbsp (or to taste)
Crushed Black Pepper: 1 tbsp
Ground White Pepper: 1 tbsp
Turmeric Powder (Haldi): 1/4 tbsp
Coriander Powder (Garnish): 1.5 tbsp
Kasuri Methi Leaves: 1 tbsp (crushed between palms)
Fresh Coriander & Ginger: For final garnish
🍳 STEP-BY-STEP COOKING PROCESS
Flash Fry Chicken: Heat 1 cup oil in your karahi on high heat. Add 1 kg chicken and fry for 1 minute. Add 1 tbsp ginger garlic paste and fry for another 3–4 minutes until the chicken changes color. Remove the chicken and set aside.
Build the Gravy: In the same hot oil, add thinly sliced onions and cook until fully golden brown. Return the fried chicken to the pan.
Spice Fusion: Add salt, turmeric (haldi), white pepper, and crushed black pepper. Mix thoroughly and cook for 2 minutes.
Tomato Steam: Place 5 whole tomatoes on top of the chicken and cover with a lid. Drop heat to low-medium and let steam for 7 minutes.
Skin & Mash: Remove lid and slip off the softened tomato skins with tongs. Use a wooden spoon to mash the tomatoes directly into the chicken. (Pro-Tip: Never use a blender if you want that authentic texture!)
High-Heat Bhunai: Keep stirring and mashing on medium-high heat for 15–20 minutes until the curry smooths out and oil completely separates.
Simmer & Finish: Cover with lid on low heat for 2–3 minutes to allow the oil to float to the top. Once your gravy reaches desired thickness, turn off heat.
Garnish: Finish with 1.5 tbsp coriander powder and 1 tbsp crushed kasuri methi. Serve piping hot with fresh Naan or Roti!
