What happens when I hand IronWorks Brewing over to Craig for the day? 🍺😂 In this all-grain homebrewing brew day, Craig takes over the brewery as we step back more than 140 years to brew the Ushers 1885 68/- Mild Bitter Historic Recipe Kit from The Malt Miller. This isn't a modern interpretation dressed up with an old name. The recipe is based on an 1885 Ushers of Edinburgh 68/- Mild, reconstructed by the Durden Park Beer Circle and subsequently adapted for modern homebrewing by The Malt Miller. The original historic beer was around 1.080 OG; this modern version has been reduced to approximately 1.062 OG while retaining the character of a rich Victorian-era beer. And despite being called a Mild, this certainly isn't the low-strength 3–4% dark mild many of us associate with the name today. The modern recipe targets: 🍺 23 litre batch 🌾 OG: 1.062 📉 FG: 1.018 💪 ABV: 5.8% 🎯 72 IBU 🌡️ 67°C mash for 60 minutes 🔥 60-minute boil 🌿 Goldings hops 🧫 WHC Fountainbridge Scottish Ale Yeast The grist is beautifully simple: Golden Promise and Amber Malt, while a substantial Goldings addition provides the bitterness. WHC Fountainbridge is used for fermentation, bringing gentle esters, malt depth and a crisp finish to the historic recipe. There's even an optional traditional dry-hop addition which Craig is going to do. But this brew day has another purpose. Craig has brewed beer before, but this time he's getting properly involved in the complete all-grain process — from water preparation and mash-in through recirculation, sparging, boiling, hopping and finally getting the wort ready for fermentation. And I'm supposed to be supervising. Supposed to be. 😂 We also do things slightly differently at the end of this brew day, using a no-chill transfer so Craig can take the wort away and complete fermentation himself. So, this isn't simply a video about following a beer kit. It's a chance to explore historic British brewing, traditional ingredients, all-grain brewing techniques and how beer styles have changed over the last 140 years — while seeing whether Craig can successfully take over IronWorks Brewing without me interfering too much. 😜 The Ushers 1885 68/- recipe kit used in this video is available from The Malt Miller – Ushers 1885 68/- Mild Historic Recipe Kit. The kit includes the full grain bill, Goldings hops, WHC Fountainbridge yeast, ProMix and brewing instructions. We'll come back to the beer once fermentation and conditioning are complete to find out what a Victorian-style 68/- Mild actually tastes like — and, more importantly, whether Craig is allowed back into the brewery. 😂🍺 If you're interested in all-grain homebrewing, historic beer recipes, British ales, brewing science and developing your own beer, subscribe and join us at IronWorks Brewing. 🍺 Great Beer, Brewed at Home. ⚙️ Beer | Science | Engineered.
