Beta, your butter chicken comes out pink, thin and sweet because you think it's one pot - it's two. Charred marinated chicken AND a butter-tomato-cream gravy, married at the end. And the restaurant's "secret" is one dried leaf you can buy for a few coins. Here are 7 old tricks for butter chicken that finally smells like the restaurant, the way my father made it.

THE 7 TRICKS (written out so you can keep them) -
1. Butter chicken is TWO dishes, not one - the charred chicken and the makhani gravy, made apart and married at the end. Cook it as one thin pot and you have neither.
2. MARINATE hours, not minutes - yogurt, lemon, Kashmiri chilli, ginger-garlic, garam masala. The yogurt carries spice deep inside; without it the flavour only coats the surface.
3. CHAR the chicken first, apart - grill, hot oven, coals or a smoking pan - until the edges blacken. That smoke is the soul; pale boiled chicken can never give it.
4. BHUNA the base till the oil comes back, and thicken with CASHEW (not flour, not a flood of cream). Raw, unbhunoed tomato = thin, sharp gravy.
5. KASOORI METHI - dried fenugreek leaf, crushed between your palms over the pot at the end. THIS is the "restaurant smell" almost everyone leaves out. Don't skip it.
6. Gentle finish + balance - warm the cream through (don't boil it or it splits); Kashmiri chilli for red without fierce heat; a touch of sweet to round the tomato.
7. Make the MAKHANI base ahead - it's the same gravy under paneer butter masala and matar. Then a weeknight butter chicken is 20 minutes, not a Sunday.
Safety: raw chicken - keep it, its board and your hands apart from everything and wash after; cook it through (no pink at the joint); stand back when marinated chicken hits hot fat - it spits.
