We spend so much time thinking about what goes on our plate—but rarely stop to think about what happens to our food when we cook it. High-temperature cooking, particularly grilling, frying and charring, can generate compounds such as heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs), some of which can damage DNA and have been studied for their potential role in cancer development. That doesn’t mean we need to fear grilled food or give up the foods we love. It’s about awareness and balance. A few simple shifts can help: • Avoid heavily charring or burning food • Cut away charred portions • Use steaming, poaching, boiling or baking more often • Rotate your cooking methods • Include plenty of colorful, plant-rich foods and spices Healthy eating isn’t only about choosing the right ingredients. Sometimes, it’s also about how we transform them before they reach our plate.
