▪︎For boiling : Salt 2 to 3 cups Turmeric powder 1 cup Water as required for boiling ▪︎For soaking: Mustard seeds 1/2 cup ▪︎Spices: Fenugreek seeds 1/2 cup Fennel seeds 1/2 cup Salt 1/3 cup (remove 2 tbsps from it) Red chilli powder 1/3 cup Turmeric powder 1/4 cup Chilli flakes 1/4 cup Kashmiri lal mirch 1/4 cup Nigella seeds 1/4 cup Garlic (Full) 2 pcs Oil 4 cup + 2 to 3 liter Until soaked "Glueberries were 4.250kg after drying before 5.800 kg" Method 1. Cut the stems off the glueberries and wash them well. 2. In a large pot, add the glueberries with a generous amount of water. Add salt and turmeric, then bring to a boil. 3. Tip: ●If the glueberries become fully tender, immediately remove them from the heat, drain them, and transfer them to a plastic container. Fill the container with room-temperature water and add salt, turmeric until the glueberries are completely covered. ●If the glueberries are almost tender, turn off the heat and let them cool in the cooking water. Once cooled, transfer them to a plastic container along with the water. 4. Add the ground mustard seeds, stir well, and cover the container. Leave it for 3–4 days, stirring once every day. 5. After 3–4 days, wash the glueberries thoroughly to remove the mustard mixture and remove the cover on top of glueberries. 6. Spread the glueberries on a large clean cloth and let them dry under a fan or in an air-conditioned room for 24 hours. Do not dry them in direct sunlight, as they will turn dark. 7. In a separate bowl, mix the pickling spices with the crushed garlic and oil. 8. Add the dried glueberries in batches, coating each batch well with the spice mixture. Transfer the coated glueberries to a clean, dry storage container. 9. Pour the remaining spice and oil mixture over the top. Then add 2–3 litres of oil, making sure the glueberries are completely submerged. The oil should sit about half a finger's width above the glueberries so that none are exposed. ■ Storage Tips Never use a wet spoon or allow any water droplets into the pickle, as this can spoil it. For the first 2 days, cover the container with a muslin cloth or lawn scarf to allow airflow. After that, seal the container with an airtight lid for storage.
