Today I'm making homemade gourmet Pringles with a recipe developed by pastry chef Claire Saffitz from the Bon Appétit Test Kitchen. Claire developed and tested this recipe to show how to make Pringles at home with a few special ingredients. Let me demonstrate step-by-step how to make gourmet Pringles at home.

Ingredients:
50 g potato flour
10 g corn starch
10 g white rice flour
1/2 tsp kosher salt
35 g water
Process:
Knead ingredients into a shaggy dough
Cover in plastic and let rest 15 minutes
Knead again to incorporate dry pieces
Pass through widest setting of past roller 12 times, folding each time until dough is fully hydrated
Cut cough in half length wise
Pass each half through pasta maker 2 times on each setting until you reach the thinest possible piece of dough
Cut dough in half lengthwise as you go as it gets too long to handle
Working 1 piece at a time, while other pieces are covered…
Lightly brush with corn starch to prevent sticking
Pass through pasta roller on thinest setting between 2 pieces of Silicon Mat lined with parchment paper on each side
Dough should be almost see-through
Cut out dough using oval cutter
Cooking:
Heat oil to 300 F
Fry ovals one at a time, blanching in 300 F vegetable oil for 5 seconds to puff
Then place in wire mesh and aluminum foil cage
Fry again for 60 seconds until crisp and lightly golden
Remove from cage
Pat with paper towels
Lightly sprinkle with salt
