PREPARE THE CHILLIES: Wash the large green chillies thoroughly and make a lengthwise slit in each chilli. Carefully remove the seeds according to your preferred level of spiciness. 2. PREPARE THE POTATO FILLING: Boil and mash the potatoes. Add salt, red chilli powder, turmeric, coriander powder, amchur, cumin, fennel seeds and fresh coriander. Mix everything well to prepare a flavorful filling. 3. STUFF THE CHILLIES: Take the prepared potato mixture and carefully stuff it into each slit green chilli. Press gently so that the filling stays inside. 4. PREPARE THE BESAN BATTER: In a bowl, add gram flour, salt and spices. Gradually add water and whisk to make a smooth, medium-thick batter without lumps. 5. COAT THE MIRCHI: Dip each stuffed chilli into the besan batter and coat it evenly from all sides. 6. FRY THE MIRCHI VADA: Heat oil in a deep kadhai over medium heat. Carefully place the coated chillies into the hot oil and fry until they become golden brown, crispy and properly cooked. 7. DRAIN THE EXCESS OIL: Remove the crispy Mirchi Vadas from the oil and place them on a plate lined with paper to absorb excess oil. 8. SERVE HOT: Your delicious Rajasthani Mirchi Vada is ready! Serve hot with green chutney, sweet chutney or a cup of tea and enjoy this famous street-food favorite at home. 🌶️✨
