Most People Cook Enchiladas Wrong! Try 5 Mexican Tricks for Perfect Enchiladas Every Time Your tortilla cracks the second you try to roll it. Your enchiladas go into the oven and come out as orange paste instead of enchiladas. The middle bites run warm tortilla against cold chicken, or the sauce pools thin at the bottom of the plate. It was never your hands, mija — somebody taught you the order backwards. I'm Consuelo. For thirty years I've fed a house full of kids on a tight budget, and almost everything I know about the stove I learned standing next to my mother. Her oven almost never touched an enchilada — this is a dish you build and eat, not one you bake and forget.
