How to Make Fluffy Stuffed Pancakes | Banana & White Chocolate

These homemade fluffy stuffed pancakes are filled with creamy white chocolate spread and fresh banana slices. Golden, soft and incredibly delicious. A little twist on classic American pancakes! Perfect for a cozy breakfast, weekend brunch or whenever you're craving something sweet. And the best part? You can easily customize the filling with your favorite ingredients! INGREDIENTS (4 large or 8 - 10 smaller pancakes) For the pancake batter: • 180 g all-purpose flour • 2 tsp baking powder • 1 tsp baking soda • 2 tbsp sugar • 2 pinches of salt • 2 eggs • 160 g greek yogurt • 90 ml milk • 2 tbsp olive oil For the filling: • 1 or 2 bananas • white chocolate spread (or your favorite spread) For topping: • powdered sugar • melted white chocolate spread Any toppings you love! INSTRUCTIONS 1. In a bowl, combine the flour, baking powder, baking soda, sugar and salt. 2. In a separate bowl, whisk together the eggs, greek yogurt, milk and olive oil. 3. Pour the wet ingredients into the dry ingredients and gently mix until just combined. A few lumps are perfectly fine. 4. Slice the bananas into thick rounds. 5. Lightly spray a non-stick pan with olive oil and heat over medium-low heat. Add a spoonful of pancake batter, followed by a teaspoon of white chocolate spread and 3 banana slices. Cover with another spoonful of batter, making sure the filling is completely sealed inside. Cover the pan with a lid and cook for approximately 3 minutes on each side, until golden brown and fully cooked through. 6. Dust with powdered sugar, drizzle with melted white chocolate spread and finish with your favorite toppings.
