Sift the powdered sugar in another bowl. Add the oil, yogurt and 1/3 of the milk along with the vanilla. Whisk vigorously until almost all the sugar is dissolved and a homogenous mixture is formed. Add the dry ingredients and the milk and fold gently with a spatula until no lumps remain. Transfer the batter to a parchment lined 5-inch cake tin. Baking in an oven- Pre-heat the oven to 160 C using just the bottom rod and fan on. If your oven does not have a fan pre-heat at 180C. Use an oven thermometer for pre-heating as each oven has different pre-heating time. Place the cake tin in the center rack. Bake for 30 minutes. Check at 25-minute mark. A skewer inserted in the middle should come out almost clean with a few crumbs. Let the cake cool completely before unmolding and serving. Baking in a kadhai on a stove top- Use a heavy bottom pan like a pressure cooker, idli cooker or a heavy bottom kadhai. Add almost an entire packet of salt in the bottom of the kadhai. Place a wire rack and a thin plate on top of it. Keep your oven thermometer on it and pre-heat it on the highest flame. Pre-heating temperature- 185C-200C If you don’t have an oven thermometer pre-heating should be done in 7-9 minutes depending upon the power of your flame (small burner vs big burner). Once pre-heated reduce the flame to the lowest. Place the cake tin in it. Close the lid and let it bake for 35ish minutes. Check at the 30-minute mark. Do not keep opening the lid of the kadhai. Only use the kadhai/cooker that has its own lid. If using a pressure cooker remove the whistle while pre-heating and baking. Once baked let it cool completely before serving.
