I explore the working-class traditions behind dishes like salted porridge, kippers, bannocks, bubble and squeak, black pudding, egg in a hole and brown gravy on bread. These meals fed families through rationing, hard winters and long shifts using ingredients that were already in the pantry.
I also try one of these breakfasts myself and consider what was lost when home cooking gave way to cereal, packaged foods and convenience. Which one would you bring back?
