Organic Piper Sarmentosum leaves picked from my garden.
This recipe makes 29-30 rolls, depending on the size of the leaves.
Piper Sarmentosum Leaf: Lá Lốt
Ingredients:
*1.5 pounds ground beef (80% lean, 20% fat)
*1 1/2 teaspoons chicken bouillon powder
*1/2 teaspoon five-spice powder
*1 teaspoon brown sugar
*1 tablespoon light soy sauce
*2 tablespoons minced lemongrass
*4 cloves minced garlic
*1 minced shallot
*1 tablespoon olive oil
Mix all the above ingredients thoroughly.
Preheat the oven to 400°F for 10 minutes.
Select large lá lốt (Piper Sarmentosum leaf) leaves with slightly long stems to make wrapping easier. Wash each leaf thoroughly and set aside. Line a baking tray with one layer of parchment paper. Wrap the rolls individually: place a leaf with the underside facing up, spoon a portion of the seasoned meat onto it, and roll it up gently, securing the roll by threading the stem through it. Brush it with a layer of olive oil and bake for 8 minutes. Garnish with scallions sautéed in olive oil and crushed roasted peanuts. Ready to serve.
