This Sweet Potato Black Bean Chili is hearty, comforting, and easy enough for a weeknight dinner. Tender sweet potatoes, black beans, corn, tomatoes, and warm spices all simmer together in one pot for a thick, satisfying chili that's perfect for cold-weather dinners.

1 tablespoon olive oil
1 medium yellow onion, diced
3-4 cloves garlic, minced
2 medium sweet potatoes, peeled and cut into ½-inch cubes
1 tablespoon tomato paste
1 tablespoon chili powder
2 teaspoons ground cumin
½ teaspoon salt, plus more to taste
¼ teaspoon black pepper
1 (28-ounce) can crushed tomatoes
2 (15-ounce) cans black beans, drained and rinsed
1 cup corn, frozen or canned and drained
1 cup vegetable broth
Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and cook for 4–5 minutes, until softened. Add the garlic and cook for about 30 seconds.
Add the sweet potatoes, chili powder, cumin, salt, and black pepper. Stir well to coat the sweet potatoes and cook for about 1 minute.
Add the crushed tomatoes, black beans, corn, vegetable broth, and tomato paste. Stir to combine.
Bring the chili to a gentle boil, then reduce the heat and simmer uncovered for 25–30 minutes, stirring occasionally, until the sweet potatoes are tender and the chili has thickened.
Taste and add more salt or chili powder if needed. If the chili becomes thicker than you'd like, add a little more vegetable broth.
Serve warm with your favorite toppings, cornbread, or tortilla chips.
Cut the sweet potatoes into fairly small, evenly sized pieces so they cook at the same rate. I like them tender but still holding their shape rather than cooking them until they completely break down into the chili.
The chili will continue to thicken as it sits, so you can add a splash of vegetable broth when reheating if needed.
Taste before serving and adjust the seasoning as needed. If the tomatoes taste particularly sharp, add 1–2 teaspoons of light brown sugar to balance the acidity.
