月光餅(地瓜餡)是很有中秋味道的傳統點心,在桃竹苗客家地區也流傳著以地瓜、芋頭等製作內餡的月光餅。不同地區、不同餅店與家庭,都有各自熟悉的做法與味道。
這次分享的是我們家喜歡的酥皮月光餅,以紅心地瓜與日本地瓜兩種地瓜混合製作內餡,再搭配自己手工製作、帶有層次的酥香餅皮。
為什麼要使用兩種地瓜?
紅心地瓜水分較多,口感柔軟、濕潤而綿密;日本地瓜含水量較低,質地較香鬆紮實,帶有類似栗子的綿密與Q彈感。兩種搭配,可以互相平衡水分與口感,讓炒好的地瓜餡綿密濕潤、不乾口,又不會因水分過多而太軟,包餡時也更容易操作。
從餅皮到內餡都自己製作,這次特別做成比較小巧、薄皮的版本。地瓜餡加入適量砂糖與奶油,慢慢炒至細緻綿密,甜度不會太高,盡量保留地瓜本身自然的香氣與甜味;搭配層次酥鬆的餅皮,烘烤時滿室飄香,剛出爐微熱時更是酥香可口。
以前在台灣也曾吃過酥皮搭配地瓜餡的月光餅,這份味道一直留在記憶裡,也是我們家人很喜歡的口味。這次重新做出來,希望也把這份屬於中秋的家鄉味分享給大家。
傳統的味道不一定每一家都完全相同。能把記憶中的味道重新做出來,和家人一起分享,對我來說就是很珍貴的事。
材料
份量:約 10 顆
地瓜餡 (10份, 每份約30g)
地瓜 180g
日本地瓜 180g
奶油 30g
砂糖 50g
油皮 (10份, 每份約18~20g)
中筋麵粉 100g
糖粉 15g
鹽 ⅛ 小匙
酥油或無水奶油 35g
水 45~50g (依不同品牌麵粉的吸水性自行微調)
油酥 (10份, 每份約14~15g)
低筋麵粉 95g
酥油或無水奶油 50g
小提醒:
地瓜餡不要炒得太乾,保留一點水分,烘烤後的口感會比較綿密。分好後可以先放入冰箱冷藏,稍微冰硬一些會更容易包餡。
地瓜餡炒好放涼後,取 300g,平均分成10份,每份30g。實際成品重量會依地瓜品種與含水量略有不同。
水量可依麵粉吸水性調整,不需要一次全部加入。
每次擀捲後都要讓麵團充分鬆弛,後續包餡時麵皮會比較容易延展,也比較不容易破裂。
每台烤箱的實際溫度略有不同,最後幾分鐘可以觀察餅皮上色情況,再依實際狀況微調烘烤時間。

Taiwanese Moonlight Pastry (月光餅) with sweet potato filling is a traditional treat that brings back memories of the Mid-Autumn Festival. In the Hakka regions of Taoyuan, Hsinchu, and Miaoli, Taiwan, Moonlight Pastries with fillings such as sweet potato and taro have also been enjoyed over the years. Recipes and flavors vary across regions, bakeries, and families.
This recipe is our family’s favorite flaky version of Moonlight Pastry, made from scratch with a handmade, layered pastry crust and a creamy filling of orange sweet potato and Japanese sweet potato. Why use two types of sweet potatoes? Orange sweet potato adds moisture and softness, while Japanese sweet potato has a firmer, fluffier, chestnut-like texture. Together, they create a smooth and creamy sweet potato filling that stays moist without becoming too soft. The filling is gently cooked with butter and sugar, keeping the sweetness light to preserve the natural flavor of the sweet potatoes. Wrapped in a thin, flaky pastry crust, these Moonlight Pastries are especially fragrant and delicious while still slightly warm from the oven. I remember enjoying flaky Moonlight Pastries filled with sweet potato in Taiwan, and that familiar flavor has stayed with me through the years. By recreating them at home, I hope to share a nostalgic taste of Taiwan and the Mid-Autumn Festival with you.
Traditional flavors may differ from one family to another. For me, recreating a flavor from my memories and sharing it with family is what makes these traditional treats so special.
Ingredients [About 10 pastries]
Sweet Potato Filling (10 portions ~ 30g each)
180 g sweet potato
180 g Japanese sweet potato
30 g butter
50 g sugar
Water Dough (10 portions ~18–20 g each)
100 g all-purpose flour
15 g powdered sugar
⅛ tsp salt
35 g ghee or clarified butter
45–50 g water*
(Adjust as needed depending on the flour's absorption.)
Oil Dough (10 portions ~14–15 g each)
95 g cake flour
50 g ghee or clarified butter
Tips:
Do not cook the filling until it becomes too dry. Retaining a little moisture will give it a softer, creamier texture after baking. Once portioned, refrigerate briefly to firm up the filling and make wrapping easier.
Once the sweet potato filling has cooled, weigh out 300 g and divide evenly into 10 portions, 30 g each. The final weight may vary slightly depending on the type and moisture content of the sweet potatoes.
Adjust the amount of water according to the flour's absorption. There is no need to add all the water at once.
Allow the dough to rest fully after each rolling step. This helps the dough relax, making it easier to stretch around the filling without tearing.
Oven temperatures can vary. Watch the pastries closely during the final few minutes and adjust the baking time as needed.
