If, like me, autumn makes you crave soft, fragrant, comforting desserts… this cake is just what you need! This hazelnut and chocolate cake is a super simple and quick recipe, perfect to make whenever you’re in the mood for something delicious without making things complicated. The aroma of toasted hazelnuts and dark chocolate makes it the ultimate indulgent autumn treat. Autumn is the perfect season to turn on the oven and fill the kitchen with irresistible aromas. INGREDIENTS For the cake: • 120 g toasted hazelnuts (or hazelnut flour) • 100 g all-purpose flour • 50 g melted butter • 3 eggs • 200 ml cooking cream • 160 g granulated sugar • 10 g baking powder For the decoration: • 50 g chopped hazelnuts • 50 g dark chocolate, roughly chopped Melt the butter in a small saucepan and let it cool. Blend the toasted hazelnuts in a food processor (adding some powdered sugar: this will prevent the almonds from releasing too much oil) until you get a fine flour. In a bowl, beat the eggs and sugar until light and fluffy. In another bowl, combine the hazelnut flour with the all-purpose flour, then add the sifted baking powder and mix well. Now go back to the egg and sugar mixture. Add the cream and continue beating. Then add the cooled melted butter and continue mixing. At this point, gradually incorporate the flour mixture into the wet ingredients and mix well. Pour the batter into a cake pan (the one shown in the video is 22 cm in diameter) lined with parchment paper, or greased and floured. Sprinkle the top with the chopped hazelnuts and pieces of dark chocolate. Bake in a preheated oven at 180°C for about 40–50 minutes. Use a toothpick to check if the cake is fully baked. Once ready, remove the cake from the oven, let it cool, and then take it out of the pan. And now… let’s cut a slice and enjoy all its deliciousness! It’s perfect with a cup of hot tea, a steaming herbal tea, or a lovely cup of hot chocolate! If you try this autumn hazelnut and chocolate cake, let me know in the comments how it turned out!
