What happens when a trip to Washington, D.C. starts with 22 flight delays, turns into an unexpected night out, and leads to a hidden tiki bar inside a Chinese restaurant? 🌴 Welcome to Tiki N Tapas — where tropical escapism meets Spanish culinary magic. In this episode, I’m taking the channel on the road to Washington, D.C. What started as a work trip quickly became an adventure involving canceled flights, incredible tapas, tiki cocktails, the International Spy Museum, and some amazing people from the tiki community. 🍹 THE TIKI & TAPAS ADVENTURE First, I make it to Jaleo, the Spanish restaurant from legendary chef José Andrés that originally got me hooked on tapas. I sample everything from vermut and pan con tomate to patatas bravas, tortilla de patatas, olives, Cava, and Priorat. Then I head into the kitchen to try recreating some of my favorite dishes from the trip. But the tiki adventure is just getting started... After another canceled flight leaves me unexpectedly stuck in Washington, D.C., the local tiki community comes to the rescue. I’m invited to a Fraternal Order of the Moai Tiki Thursday at House of Fooong Lin in Bethesda, Maryland. From the outside, it looks like an ordinary Chinese restaurant. Inside? 🌴 A completely different story. I also visit Tiki TNT on the Wharf, try their Mai Tai, and discover some interesting rum recommendations along the way. Finally, I bring the trip home by making a Doctor Funk, inspired by the Dr. Foo I tried in D.C., which itself is a riff on Dr. Wong — ultimately tracing the drink back to the legendary Dr. Funk from Don the Beachcomber.
