Droëwors is a Southern African dried sausage snack, but it's so much more than that. Freshly minced beef and lamb fat, coriander seed, and other aromatic spices are mixed together and stuffed into a natural sheep casing. Hanged for a few days in the crisp and dry winter air. Seriously good! Baie, baie LEKKER! Recipe ∙ 3.5kg Beef (I used brisket, chuck) ∙ 1.5kg Lamb tail fat ( Beef Brisket fat will also be fine) ∙ 300ml Worcestershire sauce ∙ 125ml Brown vinegar ∙ 22/24 Natural sheep casings( Soaked overnight and inside rinsed) Spices ∙ 125g fine sea salt ( 6 tablespoons) ∙ 25g Black peppercorns ( 2½ tablespoons) ∙ 18g Coriander seeds ( 3 tablespoons) ∙ 8g fine Nutmeg ( 2 teaspoons) ∙ 5g fine cloves ( 2 teaspoons) ∙ 6g Allspice ( 2 teaspoons) ∙ 7g Fine Coriander ( 3 teaspoons) Enjoy!☺ You can find us here: Facebook Page: https://www.facebook.com/Wolkberg-Art...
