PLAIN OKRA SOUP RECIPE || THE BEST CAMEROONIAN STYLE In today’s video, I’m showing you how I prepare a simple and flavorful Cameroonian plain okra soup while using little or no oil. This version is packed with the flavors of smoked fish, mackerel, crayfish and pepper, and it is served with yellow garri. INGREDIENTS • Okro • Mackerel fish • Smoked bonga fish • Dried strong Canda fish • Crayfish • 1 large onion • Scotch bonnet peppers (adjust to your preference) • 2 seasoning cubes • Salt • Water • Bush pepper (optional but highly recommended) • Oil (optional — I did use very little oil in this recipe) METHOD Season the mackerel with blended onion and Scotch bonnet pepper, then add it to a pot with a little water and allow it to cook for about 7 minutes. While the fish is cooking, wash the smoked fish thoroughly with hot water and salt. Toast it in a dry pot until it becomes completely dry. If you have a dehydrator, you can use one instead. Once the smoked fish is properly dried, blend it until smooth using a strong blender or food processor. Remove the cooked mackerel from the pot and keep the stock in the pot. Add more water according to your preferred quantity, then add the blended smoked fish and blended crayfish. Allow everything to boil and develop its flavor. Add salt and seasoning cubes as needed. Next, add the chopped okra and allow it to cook for about 7 minutes. I prefer to remove the okro afterward to help maintain its texture and freshness. For an even deeper traditional flavor, bush pepper is highly recommended if you have it available. Serve your plain okro soup with yellow garri and enjoy!
