Hello and welcome to Roots Routine! 🌿❤️ Today I’m sharing another simple day from our home — making homemade adjika for winter. 🌶️🍅 I had already washed and chopped all the vegetables, and my daughter Anya helped me grind everything using a meat grinder. It’s always nice when we can work together in the kitchen and prepare something homemade for our family. After grinding all the vegetables, I put the adjika on the stove to cook. While it was simmering, I washed and prepared the jars, peeled the garlic, and got everything ready for canning. Finally, when the adjika was ready, I filled the jars and sealed them for winter. ❤️ There is something so satisfying about preserving fresh vegetables and knowing that we’ll be able to enjoy a little taste of summer during the cold months. Thank you so much for spending this day with us and watching our simple everyday life. ❤️ 🌶️ HOMEMADE ADJIKA RECIPE Ingredients: • 5 kg tomatoes (plum tomatoes are best) • 1 kg sweet peppers • 1 kg apples (sour apples are best) • 1 kg onions • 1 kg carrots • 3 tbsp salt • 10 tbsp sugar • 100 ml vinegar • 150 ml vegetable oil • 4 hot peppers • 4 garlic bulbs How to make it: Grind all the vegetables and apples through a meat grinder. Add the salt and sugar and cook for about 1.5 hours. About 15 minutes before the end of cooking, remove some of the excess liquid if necessary, then add the vinegar, vegetable oil, hot peppers and garlic. Sterilize the jars and lids, pour the hot adjika into the jars and seal them. This amount of ingredients makes approximately 6–6.5 liters of adjika.
