📖 All 100 of my coffee recipes in one book — Never Throw Out the Morning Coffee:

Chuck eye, flank, top sirloin: cheap steaks with a bad name they don't deserve. Here's how I turn them into a steak people ask about, with the coffee left in the pot this morning.
I'm Amos. I'm 74, I've been cooking for sixty years, and for thirty-eight of them I ran the kitchen of an old stone inn in Vermont, where Saturday was steak night: forty plates, and never ribeye money. Today: the cheap cuts I buy, my coffee marinade with real measurements, how long to marinate, the one mistake that ruins the steak right before it hits the pan, and my mother's trick that turns the leftover marinade into a glossy glaze in three minutes.
COFFEE MARINADE FOR STEAK (about 2 lb of steak, 4 people)
1 cup strong brewed coffee, cooled
1/4 cup soy sauce
2 tbsp Worcestershire sauce
2 tbsp brown sugar
2 tbsp oil
1 tbsp balsamic or red wine vinegar
3 cloves garlic, crushed
1 tsp black pepper
Zip bag, fridge 4 to 12 hours (more than a day turns the outside mushy).
Pat dry. Grill or sear over high heat: a hot cast-iron pan, 3 to 4 minutes a side for a 1-inch steak, about 130°F (54°C) for medium-rare. Rest 10 minutes. Slice thin, across the grain.
The used marinade: throw it away, or boil it hard for 3 minutes and brush it on at the end. That's my mother's trick.
What's the cheapest cut you ever made taste like a million dollars? Tell me in the comments. I read every one.
New coffee recipes every day. Pour yourself a cup and cook along with me.
