Jiangxiangbing, also known as Tujia Sauce Pancake, is a traditional savory flatbread originating from Hubei, China. Today, it is commonly found at street food stalls across the country. To make it, the dough is rolled into a thin flatbread and cooked on a hot griddle until both sides turn golden brown and crispy. While still hot, it is brushed with a rich sauce made from fermented bean paste, sweet wheat paste, chili, and a blend of spices. Finally, chopped scallions and white sesame seeds are sprinkled on top. Fresh off the griddle, Jiangxiangbing is crispy on the outside, soft and layered on the inside, and packed with a rich, savory sauce flavor and a mild spicy kick.
