Stuffed Turkey Breast with Sausage, Gouda and Spinach

As an alternative to boring roasted turkey for the holidays
try buying a large turkey breast and stuffing it. This recipe rocks
and your friends and family will absolutely love it. Be creative with
what you use for the stuffing. The possibilities are endless. Enjoy!!

Ingredients:
1 Large turkey breast Approx. 5-6 #
1 Large onion diced
2 Oz.Garlic chopped
1 Bag Organic spinach
4 Oz. Smoked Gouda grated
1 # Sausage casing removed
Olive oil
Pastry bag
Procedure:
1. Pre-heat the oven to 350 degrees.
2. Heat a saute pan over medium high heat till hot.
3. Add about 1 Oz. olive oil.
4. Add the onions and garlic and cook for 2-3 minutes.
5. Add the sausage and cook for 3-4 more minutes.
6. Remove from heat and allow to cool.
7. With a sharp boning knife, make a pocket in the turkey
breast. Don't make the initial incision to large because
during the roasting process, the stuffing will pour out.
8. Add the grated cheese to your cooled sausage mixture.
9.Using a food processor, puree the cooled mixture in
increments. Don't liquify.
10. Heat a saute pan over med-high heat for 2 minutes.
11. Add some olive oil and pan sear the turkey breast skin
side down until golden brown and crispy. Approx 3-4 minutes.
12. Flip the breast and sear the other side for 2 minutes.
13. Place the breast in a roasting pan skin side up.
14. Roast for about an hour. Ovens vary. you want to reach an
internal temperature of 165 degrees. Check with a thermometer.
15. Once cooked allow the breast to rest for 10 minutes.
16. Slice and go wow your guests!!
