In this episode of Pati's Mexican Table, I'm reliving one of my all-time favorite family vacations: a ride on El Chepe Express, a historic passenger train offering stunning views of Mexico's breathtaking Copper Canyon. It has a fully operational on-board restaurant, Urike, offering an authentic taste of the Sinaloan countryside. I find my way into the kitchen to see how the chefs produce a gourmet menu while swaying along with the train as it thunders down the tracks. One of the best parts of the ride? The breakfast. Fresh-squeezed orange juice, fresh bread and pan dulce, crispy chilaquiles, and steaming cups of coffee. In my kitchen, I relive the experience by cooking up a mind-blowing Sinaloan breakfast. First, I bake Orejas, an iconic pan dulce that's delightfully sweet, crunchy, and flaky.
