Sweet Kozhukattai & Modak ❤️
📝 Ingredients
Kozhukattai Dough
Rice flour – 1 glass
Water – 2¼ glasses
Salt – a little
Gingelly oil – a little
Coconut-Jaggery Filling
Fresh grated coconut – ½ coconut
Jaggery – ¼ glass
Water – ½–1 tsp
Cardamom powder – a little
For shaping
Rice flour – a little
👩🍳 Method
1. Prepare the dough
1. Boil 2¼ glasses of water with a little salt and gingelly oil.
2. Once it boils well, add the rice flour.
3. Keep the flame low and stir continuously until it comes together into a thick dough.
4. Switch off, cover immediately and let it cool for about 1 hour.
2. Prepare the filling
1. Add grated coconut and ½–1 tsp water to a pan.
2. Sauté on low flame for about 2 minutes.
3. Add jaggery and mix well.
4. Cook on low flame until the mixture comes together. Do not make it completely dry; it should retain a little moisture.
5. Add cardamom powder, mix and switch off. Cool completely.
3. Shape the Kozhukattai
1. Take a small portion of cooled dough and roll it.
2. Shape it into a small cup using your fingers.
3. Add the coconut-jaggery filling, cover and seal well.
4. Shape neatly with your fingers.
4. Shape the Modak
1. Take a slightly larger portion of dough.
2. Shape into a small cup, add the filling and bring the edges together.
3. Seal and shape into a Modak.
5. Steam
1. Arrange the Kozhukattai and Modak in a steamer.
2. Steam on medium flame until the outer layer becomes soft, glossy and slightly translucent.
3. When the coconut filling starts showing through the outer layer, it is a good sign that they are cooked.
4. Remove carefully and allow them to cool slightly before handling.
