A Hidden Bakery in Zan 🇱🇧: Real Manakish, Wood-Fired Bread & Flavors of Our Grandparents

Deep in the village of Zan, Lebanon, we discovered a hidden bakery that feels like stepping back in time. A passionate woman, a unique wood-fired oven, natural ingredients from the land, and dough made simply with wheat flour, yeast and salt. No unnecessary ingredients, no shortcuts — just real food. We taste her traditional zaatar manoushe, prepared the old-fashioned way with olive oil and local zaatar, an incredible egg and qawarma creation, labneh, fresh vegetables and village specialties. And then we get creative with seasonal figs, turning them into a completely new manoushe straight from the wood-fired oven. The dough is something special: beautifully toasted and crispy on the outside, yet soft inside, with the unmistakable aroma of fire and wood. This is more than a bakery.
