The History of Truffles, White Truffle, Black Truffle
In December 2007, bidders in Macau, London and Florence competed for an object that looked like a pale, misshapen stone. It had been dug from the soil in Tuscany and weighed about 1.3 kilograms. The winning bid was 330,000 dollars — a world-record price for a single truffle.
The buyer was Macau casino magnate Stanley Ho. But the strangest part was not the price. It was that nobody had manufactured this luxury object, and nobody could simply order another one. It was the fruiting body of a fungus, formed underground in partnership with a living tree.
To understand why anyone would pay the price of a house for it, we have to follow the truffle from ancient thunder myths to a French farming experiment that changed its history — and then to the scientific puzzle growers are still trying to solve today.
A truffle is not a root, a tuber or a tiny underground potato. It is the spore-producing body of a fungus. Most of the organism is a web of microscopic filaments in the soil, wrapped around the fine roots of trees such as oak, hazel, hornbeam, willow or poplar.
