In this episode of Curry Made Simple, I'll show you how to make delicious restaurant-style chicken biryani with juicy chicken, perfectly cooked basmati rice, aromatic spices, saffron and crispy fried onions. You don't need a special biryani pot or complicated techniques. I'll show you the simple steps that make all the difference — especially how to cook the rice properly and finish the biryani with gentle dum cooking. 🍛 What you'll need For the chicken: 700g boneless chicken thighs 120g Greek yogurt 1 tbsp lemon juice 1 tbsp ginger 1 tbsp garlic 1 tsp garam masala 1 tsp cumin 1 tsp Kashmiri chilli powder ½ tsp turmeric 1 tsp salt 1 tbsp vegetable oil For the rice: 350g basmati rice Bay leaf Green cardamom Cloves Cinnamon Salt For the biryani: Onions Tomatoes Green chilli Garam masala Cumin Kashmiri chilli Fresh coriander Fresh mint Butter or ghee Saffron Warm milk Fried onions 👨‍🍳 The key to great biryani The secret isn't simply adding more spices. It's getting three things right: 1. Don't overcook the rice Cook it to around 70% before layering. 2. Build a rich chicken base The chicken should be surrounded by a thick, flavourful masala — not a watery sauce. 3. Finish with dum cooking Low, gentle heat allows the rice, chicken and spices to come together beautifully. Serve with cooling cucumber raita, fresh herbs and a squeeze of lemon. ⏱️ Chapters 00:00 Chicken Biryani at Home 00:15 Welcome to Curry Made Simple 00:30 Ingredients 01:05 Marinating the Chicken 01:45 Cooking the Rice 02:35 Building the Chicken Masala 03:20 Layering the Biryani 04:05 Saffron & Butter Finish 04:35 Dum Cooking 05:15 Biryani Reveal 05:50 Serving 06:20 Final Thoughts Welcome to Curry Made Simple — an English-language series from Quick Indian Kitchen. 🇬🇧 Easy Indian recipes for home cooks 🇺🇸 Restaurant-style Indian food made simple 🍛 Authentic Indian favourites 👨‍🍳 Beginner-friendly techniques 🌶️ Simple explanations of Indian spices and cooking methods Authentic Indian Food • Simple Steps • Delicious Results If you enjoyed this recipe, subscribe to Quick Indian Kitchen and follow the Curry Made Simple series for more Indian favourites. #ChickenBiryani #Biryani #IndianFood #IndianRecipes #CurryMadeSimple #EasyIndianRecipes #IndianCooking
