Learn to make a simple Chinese tomato egg noodles dish for a quick, comforting meal at home. This classic recipe comes together in 15 minutes.
This video shows you exactly how to balance flavors using fresh cherry tomatoes, fluffy scrambled eggs, and tender noodles. It is perfect for anyone wanting a fast, satisfying lunch or dinner without complicated techniques.
Ingredients
• 2 cups cherry tomatoes, sliced, or another tomato, chopped
• 3 eggs, beaten with salt
• 1/4 English cucumber, julienned
• 1/2 green onion, chopped
• 1 clove garlic, minced
• 1 to 2 bundles dry noodles, about 3.5 oz per person
• 2 tablespoons olive oil, divided
• 1 cube chicken bouillon
• 1 cup water
• Salt, to taste
• 1 teaspoon rice vinegar or Japanese rice vinegar, optional
• 1/2 teaspoon chili sauce, optional
Instructions
1. Prep the tomatoes, cucumber, green onion, and garlic.
2. Heat 1 tablespoon olive oil in a frying pan. Add the beaten eggs and scramble until just set. Remove from the pan and set aside.
3. Add the remaining 1 tablespoon olive oil to the same pan. Saute the green onion and garlic for 1 to 2 minutes, just until fragrant.
4. Add the tomatoes and a pinch of salt. Cook for 2 to 3 minutes, until the tomatoes soften and begin to release their juices.
5. Add the chicken bouillon cube and 1 cup of water. Simmer for 2 to 3 minutes to create the sauce.
6. Add the scrambled eggs back to the pan and let everything mingle. Taste and adjust with salt. The sauce should taste slightly saltier than usual because it will season the noodles.
7. Bring a pot of water to a boil. Add the dry noodles and cook according to the package instructions, but check early. My package said 12 minutes, but the noodles were already done around the 7-minute mark.
8. Rinse the noodles under cold water and drain well.
9. Assemble the bowl with noodles, all of the tomato egg sauce, julienned cucumber, a splash of rice vinegar or Japanese rice vinegar, and a small dollop of chili sauce. Mix and enjoy.
